Streusel Coffee Cake

This amazing coffee cake greeted us every morning at the Roscoe Motel¬†in Roscoe, NY. It’s a real childhood memory for me, flavor, taste, touch – wonderful adventures while my dad ventured into the Beaverkill to fly fish. Adventures that started with this coffee cake fresh in the front office, to playing make believe with the pieces of their Battlestar Galactica board game, finding tadpoles in their drained pool and playing with my imaginary friends, the Beaverkillians, along the rocky Beaverkill shore while my dad and brother explored the waters of the Beaverkill.

It is super easy, super basic and a great way to start any day:

Streusel Coffee Cake

Prep time: 10 minutes
Total Time: 35 minutes
Servings: 10

Cinnamon Streusel:
1/3 cup Original Bisquick(R) mix
1/3 cup packed brown sugar
1/2 teaspoon ground cinnamon
2 tablespoons firm butter or margarine

Coffee Cake:
2 cups Original Bisquick mix
2/3 cup milk or water
2 tablespoons sugar
1 egg

  1. Heat oven to 375*F. Grease 9-inch pan (round or square, both work).
  2. In small bowl, stir streusel ingredients until crumbly; set aside.
  3. In medium bowl, mix coffee cake ingredients until blended. Spread in pan. Sprinkle with streusel.
  4. Bake 18-22 minutes or until golden brown and knife comes out clean.
  5. Serve warm.
